Open the thread in Messages, WhatsApp, Instagram DMs — any app with text. Take a screenshot: on iPhone, press the side button and volume up at the same time.

Open the screenshot in the Photos app. Tap the Live Text button in the lower-right corner — it looks like lines inside brackets — or long-press any word. Tap Select All, then Copy.
