Strawberry.

Citizens... The season turns... The fields are dotted with crimson. We speak today of The Strawberry. First... The Selection. Do not be seduced by size. Those giant... pale... perfectly conical berries in the winter supermarket? They are turnips in fancy dress... they taste of water and regret. You want the small ones... The dark red ones... The ones that look a bit... irregular. Pick it up... Smell it. If it does not smell like a warm summer afternoon... put it back. The nose knows the truth before the tongue. Wash them gently... keep the green caps ON while you wash. If you remove the cap first... the berry drinks the water. We want juice... not tap water. Way Number One... The Structure. Consider the Nest... The méringue. This is engineering with air. Take the whites of the egg... No yolk... Not a drop. The yolk is fat... and fat is the enemy of the rise. So separate them, save the yolks for a mayonnaise in another recipe later. Whisk the whites. Slow at first... then fast. When they look like clouds... rain in the castor sugar with a sieve. Glossy... White... Stiff. Test it... hold the bowl upside down over your head. If you trust your work... you will remain clean. Pipe it into nests... Bake it low... and slow. We are drying the méringue... not cooking it. Fill the crisp shell with whipped cream... and crown it with the berry. Civilization on a plate. Way Number Two... The Riot... The Eton Mess. Sometimes... civilization collapses. Take that perfect méringue you just made. And crush it. Do not pulverize it... shatter it. Make more whipped, sugared cream... Take the strawberries... chopped roughly. Fold them together with the shards. It looks like a disaster... It looks like the aftermath of a battle in a bakery. But the taste? The crunch... the cream... the acid of the fruit. It is the harmony of chaos. Serve it in a glass... Let them see the wreckage. Way Number Three... The Alchemy. The Strawberry is not just for the cold. It can handle the fire. Put the berries in a roasting tin... Whole. Sprinkle with sugar... and a grind of Black Pepper. Yes... Pepper... It wakes up the tongue. And then... The Void. Balsamic Vinegar... The good stuff... Thick as tar. Roast them for ten minutes. They will collapse... they will bleed a dark... sticky syrup. Serve this hot... over cold ice cream. The contrast... will break you. Three ways. The Structure. The Chaos. The Heat. Respect the fruit. It died to make your summer sweet. Carry on.
