Citizens, the Sun has risen. But the mind... is still sleeping. We need the Black Nectar. Do not reach for the instant jar. Those are granules of despair. We start with the Bean. Arabica... Dark Roast... Oily... Buy them whole... They hold their secrets until the last moment. The Grind... Use a Burr Grinder... We want to crush the bean, not hack it to death... For the Moka Pot... we want sand... Not flour. If it is too fine... it chokes... If it is too coarse... it weeps. The Brew... We need the Stove-top... and the Moka. Water in the base, just below the valve... Now fill the funnel. Do. Not. Tamp. It. Level it off with your finger... Gently... Screw it together... Tight. Put it on the flame... and wait... Listen for the rumble. The pressure builds... The steam rises. It forces the water through the dark earth. A rich, black stream; pour it immediately... Drink it black... Respect the bitterness. But... we made too much..! ...But this is Good... Because now... we build the Legend. ... Tiramisu ... The "Pick Me Up." The Mascarponi... Creamy... Thick... Whip with sugar and yolks until it is pale as dawn. Next, the Savoiardi... The Ladyfingers... This is the danger zone. Dip them in the now-cold, strong coffee. Add a splash of Marsala... or Amaretto. But listen closely. Just a dip... A kiss... Not a bath... If you soak them... they turn to mush... We want structure. Layer one... The coffee-kissed biscuits. Layer two... The sweet, white cloud. Repeat... Build it up, layer by layer... And finally... The Dusting. Cocoa Powder... Bitter and Dark... Sift it over the top like volcanic ash... Do not eat it yet. Patience! It must sleep in the cold, in the refrigerator. The flavours must marry... The coffee bleeds into the cream. The biscuit softens, but holds the line. Take a spoon.... and Dig deep. Through the cocoa... Through the cream... Through the coffee... One bite. You are awake. You are alive. Carry on.
