Recruit... I see you. Standing in a kitchen that echoes. ... cupboards bare... Pockets light. You have the hunger, but you do not have the gear. Forget the digital scales.... Forget the cast iron, You cannot afford the heavy artillery yet. You need the guerrilla kit. Four items. That is all that stands between you and starvation. Item One... The Blade... Do not buy a block of knives. That is a trap for the wealthy fool. You need One Knife. A Chef's Knife... eight inches... Buy it cheap... but keep it clean and sharp. It is your primary weapon. It chops the onion. It slices the meat. It crushes the garlic. If you have a knife... you have a kitchen. Without it... you have teeth. Item Two... The Vessel. You can only afford one pot? Get a Deep Frying Pan. Not a flat one... one with high sides. Why? Because it is a shapeshifter. It can fry an egg. It can sear a steak. But because the sides are high... it can boil pasta. It can simmer a curry. It is the frying pan that thinks it is a saucepan. Non-stick is fine for now... cast iron when you can, but treat it gently. It is your shield against the fire. Item Three... The Board. I prefer wood, but, plastic if you must, is fine. Do not cut on the counter, You will lose your deposit. Do not cut on a plate, You will ruin the knife. Get a slab, marble if you can, it is your operating table. Item Four... The... famous, iconic, glorious... Wooden Spoon. It costs pennies... and you will attach to it. It does not conduct heat. It does not scratch the pan. It stirs, It tastes, It serves. It is the sceptre of your tiny kingdom. One Knife. One Deep Pan. One Board. One Spoon. That is the loadout. Everything else is luxury. Cook the meal. Eat. Survive to earn your pay. Recruit... You have your equipment. The Pan, The Knife, The Spoon. Now... wash your hands, clean your equipment... then we cook. We are not making a banquet, We are making survival taste like victory. The Dish is "Aglio è Olio." Garlic... and Oil. It is the peasant's triumph. Ingredients include Spaghetti... Garlic... Olive Oil... Chilli Flakes, if you are brave... Parsley, f you are rich... First... The Water. Fill your deep pan, Salt it until it tastes like the Mediterranean. Boil the water, add the pasta. Do not break the spaghetti to make it fit. Push it down gently as it softens, do not let it stick together nor to your new pan, Recruit, supervise it and keep it moving... Respect the length. While the pasta swims... The Garlic, Take three cloves, Peel them, Now... slice them thin. So thin you could read a newspaper through them. Use your cleaned, sharpened knife, Mind your washed, clean fingers. We do not want minced garlic... that burns. We want golden slivers. Drain the pasta... but save a mug of the starchy water. That is liquid gold. Dry the pan. Add the Olive Oil, a Generous amount. Add the Garlic... and the Chilli. Turn the heat on *Low*. We start cold. We let the oil warm the garlic gently. We want it to tan... not burn. If it turns black... you have failed. Bin it, Start again. When it smells like heaven... and looks like gold... Stop. Throw the pasta back into the oil. Add a splash of that pasta water. Now... The Agitation. Shake the pan, Stir with the spoon. The oil and the water will mix... they will form a creamy sauce that coats every strand. It is alchemy. Chopped parsley at the end... just for colour. Eat it from the pan if you must. It is oily, It is spicy, It is honest. You have turned water and flour into a meal. You are a cook now... Welcome, Citizen. Carry on.
